These are great for using up lots of garden goodies.
Veggie Egg Rolls
1/2 small onion, chopped
1 medium head cabbage, chopped
4 carrots, shredded
2 cups green beans, chopped
2-4 cloves garlic, minced
1 T olive oil
2 T soy sauce
2 T brown sugar
2 T hoisin sauce
2 T corn starch
salt and pepper to taste
1 T veggie soup base (like better than bouillion)
1 package egg roll wrappers
Saute all veggies in olive oil until just wilted. Add remaining ingredients until you have it well mixed and not runny anymore. Place 2 T or so of filling in wrappers and roll up. Seal with a dab of water. These can either be deep fried, or sprayed with cooking spray and baked in 400 oven until golden brown.
