I make a lot of soup especially in the winter and save most of the little bits trimmed off things such as celery (the ends, leaves etc), carrots (ends, peels and green tops), onions (papery peel, ends), woody stems of herbs (rosemary, thyme, parsley etc)..you get the idea. I take these things and stuff them into a large zipper bag and freeze. When I have a bag full I use the things that normally would go straight to the compost pile to flavor the broth. Since I literally cook out all the flavor from these veggies, I later strain them off and then compost.

Before making the soup I then need to cut up some veggies to add such as the celery, carrots, onion etc and the soup starter mix gets going once again.
