This vinegar is great when used to make your own salad dressings or even in sauces and stirfrys.

You will need a sterilized, pretty bottle with lid (the lid does not have to be pretty as it can be covered with some pretty paper). Old wine bottles or other glass bottles work well. I made smaller bottles to give away using some glass bottles someone at work was throwing away that held ice tea. Tall and thin look the best IMHO. Kim

Add to bottle in the following order:

Italian vinegar

enough tricolored peppercorns to cover bottom plus one more layer
2-3 cloves peeled garlic
1 sprig rosemary
3-4 thin slices each of green, red, yellow, orange bell peppers
fill in remainder of bottle to look pretty with: oregano, basil, thyme
fill bottle with rice wine vinegar (for a milder vinegar flavor) or regular white vinegar.

Place on top/lid. Decorate and add gift tag. Ready to use in 4-6 weeks. Stores up to 6 months.

You can make many other flavors depending on your tastes such as hot pepper/thai vinegar or citrus vinegar.
