Now that we have a formal definition, we can continue to break the rules and make it however we want! :)

Jelly
1. A clear, bright mixture made from fruit juice, sugar and sometimes pectin. The texture is tender but will be firm enough to hold its shape when turned out of its container. Jelly is used as a bread spread and as a filling for some cakes and cookies. 2. In Britain, jelly is the term used for gelatin dessert.

Jam
A thick mixture of fruit, sugar (and sometimes pectin) that is cooked until the pieces of fruit are very soft and almost formless. It is used as a bread spread, a filling for pastries and cookies and an ingredient for various desserts.

Preserves
Fruit cooked with sugar and usually pectin, used as a spread for bread. Preserves differ from JAM in that the chunks of fruit are medium to large rather than the texture of thick puree.

Conserve
[kuhn-SERV, KON-surv]
A mixture of fruits, nuts and sugar, cooked together until thick, often used to spread on biscuits, crumpets and so on.

Marmalade
[MAHR-muh-layd]
A preserve containing pieces of fruit rind, especially CITRUS FRUIT. The original marmalades were made from quince - the Portuguese word marmelada means "quince jam." Now, however, Seville oranges are the most popular fruit for marmalades.

Fruit butter
A sweet spread for bread made by stewing fresh fruit with sugar and spices until it becomes thick and smooth.

chutney
[CHUHT-nee]
From the East Indian word chatni , this spicy condiment contains fruit, vinegar, sugar and spices. It can range in texture from chunky to smooth and in degrees of spiciness from mild to hot. Chutney is a delicious accompaniment to curried dishes. The sweeter chutneys also make interesting bread spreads and are delicious served with cheese.
