Sorry its a bit out of season but its something else to make with pumpkin or butternut squash. Also sorry its in metric.
600g pumpkin or butternut squash
150g unsalted butter
150g granulated sugar
50g crushed almonds
50g candied citron
50g sultanas soaked in grappa until swollen
Grated zest of one lemon
80g plain white flour
1 heaped teaspoon baking powder
2 eggs separated
pinch of salt
Icing sugar
Method.
Peel and cube the pumpkin, then put it into a saucepan with the butter and cook it until soft. Mash it thoroughly with a pinch of salt. Stir in the sugar, almonds, candied citron, the sultanas, grappa and the grated zest.
Beat this altogether very thoroughly. Sift in the flour and the baking powder and stir. Beat the egg yolks until light and foamy, then fold in. Beat the egg whites until stiff, then fold in lightly.
Turn into a greased and lined fairly shallow cake tin and bake in a moderate oven at gas mark 4 ( 350 degrees fahrenheit, 180 degrees celsius) for about an hour, or until a wooden skewer slid into the centre of the cake comes out clean.
Turn out onto a cooling rack and then dust with icing sugar to serve
