This is Ani's idea really, but submit me some ideas for stuff to shoot next month.
I will be doing Ani's Tomato Soup......add to the pile and get your name in a video!

How about a good fall/winter garden recipe?
(amounts are very flexible!)
Kale Soup
*******
1T olive or canola oil
1 bunch freshly picked kale
1 parsnip, peeled and diced
1-2 turnips OR potatoes, peeled and diced
2 carrots, diced (peeling not necessary, just wash)
diced onion
several cups of vegetable or chicken broth (adjust for desired consistency)
salt & pepper to taste
optional but recommended: 12 oz. smoked sausage or kielbasa (leave out for vegetarian soup)
optional: a hint of red pepper for a little heat
I also add instant potato flakes (to make it thicker) and pureed white beans for the extra fiber and nutrition (I have to hide the beans in my house or they'll be picked out!)
Saute the parsnip, turnips/potatoes, carrots and onions in the oil. Add the kale and sausage/kielbasa (if using) and saute briefly, then add the broth. Bring to a boil, then turn down to a simmer. Allow to simmer for as long as you can stand it, then add potato flakes and/or bean puree, bring back to a brief boil, then serve with homemade crusty bread.
TRY to save some for tomorrow!

Here is a simple way to use up the end of summer bounty.
Rainbow Italian Zucchini
1 large onion, chopped
3 tablespoons olive oil
2-3 sweet peppers, chopped (I love different colors)
1 1/2 to 2 lbs zucchini, chopped (unpeeled)
4-5 fresh tomatoes, chopped and drained
coarse salt to taste
fresh "Italian" herbs: oregano, thyme, rosemary, basil etc to total 1/4 to 1/2 cup OR
3 tablespoons dried
feta cheese (optional but delicious)
In a large sautee pan or wok, sautee onion in olive oil until just tender. Add peppers and sautee 5 minutes until partially cooked. Add zucchini and salt and cook until zucchini just loses its liquid and almost tender. Add tomatoes and herbs. Cook all until vegetables are tender but still crisp.
This is a great side dish but to make it a meal, I top with a good couple handfuls of a low fat feta cheese...yummy!

How about a pumpkin bread? Very simple, good and comforting.
Never met a person that didn't like it. My version uses whole wheat and honey.

Pumpkin Bread
1 3/4 C. whole wheat PASTRY flour (or use half whole wheat and half white for those unused to whole wheat)
1 C. Pumpkin (canned, or your own cooked and puree'ed)
1/2 C. Oil (or melted butter)
1/2 C. Honey
1/3 C. milk
1 t. baking soda
1 t. baking powder
1/2 t. salt
1 t. vanillia
Spices:
1 t. cinnamon
1/2 t. nutmeg
1/2 t. allspice (or pumkin pie spice)
1/2 C. nuts (optional)
Beat oil honey and vanilla, add eggs: mix well.
Add dry ingredients and milk to honey mixture.
Mix in pumpkin and nuts
Put batter into a greased loaf pan.
bake at 350 for 50 minutes. Always check with a toothpick!
Cool 20 minutes before inverting out of pan.
We eat with a cream cheese, honey spread.

Super Simple, Low calorie, little seasoning needed lovely with mostly garden veggies. I love the pick and eat stuff. Yum. I have done it bbq, electric 2 sided grill and wood stove and they are lovely
Any bell or big long pepper like anahiem, ~ Put em on the grill
by itself or goes well with beans, rice, tortilla, rice, cheese, greens, tomato salsa from the garden. and the burrito can be grilled (with forman or two sided grill)
left over roasted peppers taste great in omletes.
Potatoes directly in the wood stove.
Squash, eggplant, olive oil, sea salt, Garlic mix than slap on the grill
The forman grill works lovely to cook squash fast for acorn squash cut so they are shaped like flower.
The regular grill makes a great mix chicken or beef strips, onions, garlic, green onions, zuchinni and peppers.
Chicken soup with garden greens ( I use spinach, chard, pac choi, kale or combo)
chicken
water
onion
grated ginger * my soup must have ingredient
salt
pepper
cardomom * my soup secret
cilantro(optional)
Bay leaf(optional)
Then add available garden greens
Garden Squash baked with bashamel sauce
served with pasta
Garden spaghetti squash served with
garden pasta sauce with ground chicken/turkey, garden onions, garlic, rosemary, bay leaf, fresh basil.
Lavender Tea tea plus lavender
Raspberry leaf Tea
Make something in a solar oven.
