Hello All!
I've been meaning to post about this for awhile now, and I finally have the time! About 3 years ago, my mother gave me this wonderful cookbook for my birthday: More-With-Less http://www.worldcommunitycookbook.org/more/about.html
For those of you not familiar with it, I have found it to be a great resource and an inspiration. It's a rather basic cookbook, but the underlying message is about how to make the most of what you have. There is a decided Mennonite bent to it (I did not find it preachy), I have been moved by many of the anecdotes and the recipes have helped me through some lean times.
