I've posted a black raspberry recipe before but I found a different one that uses honey instead of sugar since there was the topic of growing black raspberries in containers in a different thread. I've never made a jam with honey before so if your feeling adventurous do let us know how it turns out!

4 cups black raspberries
2 tablespoons lemon juice
1 package powdered fruit pectin
1 1/2 cup honey

Mix the black raspberries, lemon juice and pectin in a heavy-bottomed, stainless-steel pot. Bring to a boil over high heat. Stir in the honey. Return to a boil and stir slowly for 10 to 12 minutes.

The mixture will resemble a thick syrup when done.

Let cool, then pour into a storage container, cover and refrigerate.

pectin is pretty sweet, but using honey as a sweetener for jam is genius.

Made this over the weekend with wild black raspberries using the honey method. It turned out excellent! Thank you for posting the recipe:)
