I have a lot of radishes. I can only eat so many raw and Hub doesn't really eat them at all. I found a recipe to pickle radishes and modified it using what I have on hand. We'll see how they turn out tomorrow!

I used:

Radishes (of course!)
1/2 of a thinly sliced onion
1/2 cup red wine vinegar
1/2 cup sugar
1 1/2 teaspoons salt
1/4 cup water

I sliced the radishes thinly, tossed with the onion, mixed everything else together and poured over the veggies. I put it all in an air tight container and popped it in the fridge. I'll let you all know how it goes!

can't wait! I do a similar preparation with cucumbers (but I use apple cider vinegar)

I've never enjoyed the "bite" of raw radishes. Pickling sounds like the ideal solution! I do enjoy PLANTING radishes, particularly because of the grandkid satisfaction factor. I have a grandson who LOVES spicy things. He asks for radishes for his birthday! :p
