1/2 pint strawberries, tops cut off
1 cup olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried leaf tarragon, crumbled
1/4 teaspoon sugar
Combine the olive oil, strawberries, vinegar, salt, pepper, tarragon and sugar in a food processor.
Pulse until the strawberries are pureed.
The dressing can be made ahead of time and chilled.
Stir before using.
Makes 1 1/2 cups.
