How to make Gazpacho Soup fresh from the Garden

My tomatoes are ripe and it’s the perfect time for soup! But not just any old soup, Garden fresh Gazpacho…And, it’s cold.

Let’s take a trip through my garden and get all of the ingredients you need for this simply divine recipe.

The first thing I see is Arugula one of my favorite greens. Actually, Arugula is an herb, it’s a wild plant that grows well and gives your salads a unique look and an interesting flavorful taste. It will go perfectly with your Gazpacho.

What I need for this soup is growing right in front of my eyes.

I pick my heirloom tomatoes, basil, Thai Peppers (Green Peppers) and bring all of these glorious ingredients in to the house. The onions are already in the kitchen.

This is all you have to do…Cut up the tomatoes and puree them. Once they have reached a creamy consistency your tomato puree is now ready for everything else. Add basil, peppers, peppers and onions into the mix. Then add parsley, five cloves of garlic and salt and pepper to taste. Stir it all together and voila, you have a divine fresh vegetable Gazpacho. Add some croutons and you now have a great lunch or dinner. Bon appetit!
